looking for a recipe for candy that my mother made at Christmas and died without passing it?
that is a sweet that uses mashed potatoes and powdered sugar and vanilla? I remember that these are mixed together and rolled out on wax paper .. like a puff pastry ... then there was no peanut butter filling and??? then this is rolled like a jelly roll and sliced to make the wheels of your pin ... but it's been 50 years since I saw him do ... I add some to my tray asst Christmas for friends ...... thanks ....
I searched on line and found this recipe for you I hope that's what you're looking for. Please, let me know how it will be. Peanut butter - IRISH POTATO Candy 2 (1 lb.) boxes powdered sugar 1 / 2 c. hot mashed potatoes, drained 1 sm. crunchy jar of peanut butter Mix sifted sugar into potatoes a little at a time by hand. (Do not panic when potatoes sugar Blend first is added. This is what that is supposed to do. Just keep adding sugar until the consistency of pastry.) Sprinkle wax paper with additional powdered sugar. Take size of a baseball from the mixture and implementation as cakes. Smeared with peanut butter and roll like a jelly roll. Wrap rolls in plastic and cold cuts. Makes 2 rolls.
